This is one of the very great estates of Germany, and overall, the collection in 2007 is fitting of the estate’s rank and the greatness of the vintage. Changes are under way, facilitated no doubt by climate change. Beginning with 2008, there will be Pinot Blanc and Auxerrois available and 1 ha. had now been devoted to Pinot Noir. Over the last four years, there has been no chemical fertilizer here, ground cover is being used, yields have been down from 2004 on, there is less sulphur than previously, no fining, and only a single racking and fining prior to bottling. Additionally, all wines are fermented with wild yeasts in small lots.
